Here's a tip, when making a plain soup I.e cauliflower, broccoli, carrot etc. Add coconut milk.

Evan's Cooking Corner - Hearty Potato Cakes

What you'll need:
3 large potatoes
12 leaves of fresh spinach
Cheese
2 cloves of garlic
1 onion
Soy milk
Mixing bowl
Boiling pot
Frying pan
Blender
Muffin tray

What you do:
Dice the potatoes into small cubes and boil on stove top to soften. Meanwhile, slice the garlic and potatoes and sauté in frying pan, add chopped spinach towards the end and cook lightly.

Let stand for 30 mins to cool, before adding frying pan mixture to blender along with a cup of potato at a time. Pour a generous amount of soy milk over mixture, sprinkle in cheese and blend. Continue this process until the mixture is a smooth consistency.

Fill muffin tray with mixture as you would if using the tray for it's designed purpose and add to fan forced oven on 200 degrees. Bake for 30 minutes before changing the oven to fan grill to give the tops of the hearty potato cakes a crisp texture.

Enjoy.



**Important note: It is not recommended you try this recipe, visions of crispy little golden potato muffins were dashed with an overflowing tray and nothing but potato goo underneath a crisp topping (which was perhaps the only positive aspect to this overly complicated cooking adventure).

I made my first pad thai last night and it was fucked. Accidentally bought corn starch noodles instead of rice noodles and yeah, fuckn disaster.

Second worst thing I've made all year.

both housemates AND their girlfriends walked in on a kitchen disaster I had on sunday night. the timing was stunning.

lets just say chipotle salmon and brown rice bake is a great idea in theory, but the technique left a lot to be desired.

One time I made my own pizza base for the first time ever, rolled it out, put it in the oven, got invited to the pub, turned the oven off and went to the pub, came back at 4 in the morning, turned the oven on, and finally ate the pizza by cracking chunks of it off the tray with a bread knife. Frosty.

Black truffle pizza last night followed by an impeccable triple chocolate mouse for dessert.

Thailand food adventures included IRL:
Thai beef salad - spicy as fuck.
Pad Thai - should've gotten prawns not beef, dunce move.
Green curry - okay.
Penang - with huge tiger prawns. So delicious.
Peanut butter Oreos - holy shit!
Fried ice cream and fried banana. Fuck yeah.

I also drank alcoholic beverages out of a pineapple and a coconut /standard.

Yesterday I marinated some fried tofu puffs and sliced mock chicken in a mixture of oyster and chilli sauces. Fried that up with an onion, bunch of garlic, chopped mushrooms. Added broccoli, carrot, capsicum, bock choy. Can of coconut cream, glass of soy milk, whole thing of golden curry and served on brown rice. Ultimate.

Dinner was "Capricaosa" Pizza from local New Farm pizza joint "Vespa" Pizza. I bought an entre of Bruschetta too. Should have made the cunt myself tbqh.

Sandwich update: they're called banh mi and involve a baguette stuffed with some lunch meat and char siew pork and pate with cucumber, pickled daikon and carrot, coriander, chili and some delicious non descript sauces. So good I ate three today.
