A satay of whatever I could find feat. snow peas, crispy soy strips, cabbage, brussel sprouts, carrot, kai lan and home made satay sauce on homebrand rice.

Ingredients:

* 4 teaspoons olive oil
* 1 onion, chopped
* 3 cloves garlic, crushed
* 1 cup peanut butter, smooth or crunchy
* 8 teaspoons wheat-free tamari (or soy-sauce)
* 4 teaspoons brown sugar
* one 270 ml can coconut milk
*1/3 cup sweet chili sauce (optional, I don't use it)

In a saucepan or fry pan sauté onion and garlic until cooked through. Add remaining ingredients and stir well. Reduce heat and simmer until thick.


I also use a satay seasoning powder I picked up from the Indian food store in the valley as well as some chili sambal, but nether are essential.

Dinner was breakfast.

Fried up finely chopped garlic, red onion, mushrooms, heaps of pepper. Fried two eggs, sunny side up, and Eddied mozarella on top and drizzled sweet chilli. Lightly cooked some spinach with sweet soy. All served on really fucking grainy toast. Washed down with vodka and Ribena juice. Win in mouth.

I cbf'ed on the rice after sampling the 'salmon' cause it was so delicious and just smashed it into a sandwich with avocado and heaps of salt and pepper.
